In a saucepan, bring the milk, butter, and a pinch of salt to a boil.
Add the flour all at once and stir vigorously with a wooden spoon until the dough forms a smooth ball or detaches from the walls.

Transfer the dough to the bowl of a stand mixer, equipped with the whisk, and add the eggs one at a time, beating energetically between each addition.

Mash the potatoes and incorporate them into the dough mixture.
Add the cheese.
Season with salt and pepper.

Preheat the frying oil to 350 F (180 C).

Form balls of dough using 2 tablespoons and drop them into the hot oil.
Fry until the tinbits are golden and crispy.
Drain on paper towels to remove excess oil.
Season to taste.
