1. Preheat the oven to 350°F (180°C).
2. Put the dried tomatoes in a saucepan. Pour in cold water to cover them, cover and bring to a boil. Reduce the heat and let simmer for 5 minutes. Set aside.
3. In a food processor, chop the onion and garlic. Add the celery and tofu. Add the spinach. Season. Finally, add the cheese.
4. Form into balls. Place them on a baking sheet lined with parchment paper and bake for 20 minutes.
