Preparation

1. Preheat the oven to 200°C.

2. Peel the tomatoes.

3. Peel the onions; slice into rings. Separate the rings; brown in a pan with extra virgin olive oil.

4. Cut the ham into strips.

5. Roll out the pastry in a greased and floured mold. Prick the bottom with a fork.

6. Bake for 10 minutes. Remove the mold and lower the oven temperature to 180°C.

7. Spread a layer of mustard on the bottom of the tart. Alternate tomato slices and grated cheddar. Add the onions and ham strips on top.

8. Beat the eggs and egg yolks with the salted and peppered cream, and the chopped herbs. Pour over the tart.

9. Bake and let cook for about 35 minutes. The cream should be set and the pastry golden. Serve immediately.
