1. In a pot, heat the olive oil. Add the onion, diced potatoes and celery. Cook for 2 minutes.
2. Add the vegetable broth, ginger and tomatoes. Bring to a boil. Reduce the heat and cook for 40 minutes. Season with salt and pepper.
3. Remove from heat and blend the soup with an immersion blender or food processor to get a smooth texture. Season with salt and pepper.
4. Add the cream and mix. Return the soup to heat for 4 minutes.
5. Serve the soup garnished with chives and ginger.
