1. Preheat the oven to 350F
2. In a large bowl, mix the eggs with the milk. Season with salt and pepper. Add the chopped spinach and tomato paste. Mix well. Add the flour and mix to obtain a smooth batter.
3. In a non-stick pan, heat the oil. Drop small spoonfuls of batter, leaving enough space so they don’t stick together. Cook for 1 minute on each side and transfer to a baking sheet lined with parchment paper.
4. Bake for 10 minutes.
5. Remove from the oven and serve hot with a dip.
