1. Finely chop the chives and parsley.
2. Rinse and cut the tomatoes into slices. Cut the rassembleu into thin slices. Arrange the tomatoes on plates, in crowns. In the center of the tomatoes, arrange the bresaola slices, in a fan shape. Add the rassembleu slices.
3. Sprinkle with chopped herbs.
4. Make the vinaigrette: in a bowl, mix with a whisk the olive oil, walnut oil, xeres vinegar, salt, and pepper.
5. Pour the vinaigrette over the tomatoes in a thin stream. Serve with fresh bread.
