2. In a pot of boiling salted water, cook the topinambours for 15 minutes. Plunge them into an ice bath and drain them. Transfer them to a bowl.

3. Add the mayonnaise and mustard. Season with pepper.

4. Separate the egg yolks from the whites. Mash the yolks with a fork and sprinkle with paprika and salt.

5. Arrange the topinambours on the plates and place the egg yolks in the center.

6. Serve as a side dish.
