Hazelnut dacquoise:
Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) round mold and line the bottom with parchment paper. Set aside.
In a bowl, combine the ground hazelnuts, powdered sugar, and sugar. Set aside. Beat the egg whites until stiff, then gradually incorporate the dry ingredients, gently lifting the mixture with a spatula.
Pour the batter into the prepared mold, smooth the top with a spatula, and bake for 30 minutes.
Remove from the oven and let cool completely in the mold.
