Preheat the oven to 350°F.
1. Set aside 12 almond biscuits for assembly.
2. Mix the almond biscuit powder and melted butter in a robot.
3. Spread this mixture on the bottom of the cake mold and press it firmly to make it firm. Refrigerate for 15 minutes.
4. In a mixer, beat the cheese with the sugar and almond extract, then incorporate the eggs one by one to obtain a homogeneous mixture.
5. Fill the cake mold with this cheese mixture over the previous biscuit.
6. Bake for 35 to 40 minutes and let cool on a grid before unmolding.
7. For dressing, pour a base of sauce on the dessert plates, then place a piece of cake in the center. Glue two almond biscuits on the sides.
8. Garnish with pieces of fresh fruit. Serve fresh! (Note: the biscuits may soften in the fridge, add them at serving time.)
