Preparation

1. Peel the sweet potatoes. Put them in a pot of cold salted water, bring to a boil and cook for 20 minutes. Drain and mash in a large warm bowl. Add 150 ml of hot coconut milk. Season with salt.

2. In a pan, sauté the seafood for 3 minutes (without fat). Drain carefully.

3. Wipe the pan and heat the extra virgin olive oil. Add the onions, ginger, and garlic for 3 minutes.

4. Add the seafood, coriander, and remaining coconut milk; simmer for 5 minutes. Season with salt and pepper.

5. Preheat the oven to 200°C.

6. Pour the seafood in sauce into a baking dish, cover with mashed sweet potatoes, and sprinkle with shredded coconut.

7. Bake for 10 minutes. Pass under the grill for a few moments before serving.
