In a large pot, cook the potatoes in a large quantity of boiling salted water.
Drain and put in a bowl and mash with a fork.

Add the rest of the ingredients, except the vegetable oil, and mix well.
Form compact balls of your choice of size.

In a pan, over high heat, heat a good quantity of vegetable oil.
When the oil is very hot, plunge the balls and cook until golden brown.
The cooking time varies between 7 and 10 minutes,
Place the balls on paper towels to remove excess oil.

Serve hot or cold. Serve with tzatziki, salsa, or your choice of dip.
For a lighter version, cook the balls in the oven on a lightly oiled baking sheet.
