1. Place the tuna in a shallow dish and brush with lemon juice and 2 tablespoons (1 fl oz) of oil. Set aside.

2. Cut the tomatoes into thick slices. Slice the zucchinis. Cut the bell pepper into wide strips.

3. In a pan, heat 2 tablespoons (1 fl oz) of oil. Sear the tomatoes for 2 minutes per side over high heat. Remove the tomatoes and set aside. Add the zucchinis and cook for 4 minutes. Remove and set aside. Add a spoonful of oil and the tuna, and cook for 2 minutes per side, over high heat.

4. Preheat the oven to 400°F (204°C). Rub a baking dish with garlic. Place the vegetables and tuna pieces in alternating layers, overlapping them. Season with salt, pepper, and thyme, and brush with the remaining olive oil. Cook for 15 minutes in the oven. Serve hot or cold.
