Add the diced red bell peppers and chicken broth, and bring to a boil.

Then add the turkey and coconut milk, and bring back to a boil.
Reduce the heat and simmer for 5 minutes.

Whisk the cornstarch and water, and pour this mixture into the saucepan.
Stir and simmer until the sauce has thickened slightly (1 minute).
Sprinkle with coriander before serving.
