Preparation

1. Preheat the oven to 180°C.

2. Melt the butter in a pan. Brown the escalopes for 2 minutes on each side. Season with salt and pepper.

3. Remove from the pan and place in a baking dish.

4. Peel and coarsely chop the onions. Cook for 1 minute in the pan used for the escalopes. Set aside.

5. Deglaze the pan with Marsala wine, scraping the bottom with a wooden spoon. Add the chicken broth and reduce the sauce by one third over low heat.

6. Place a leaf of treviso, a slice of mozzarella, and some onions on each escalope. Pour the sauce into the dish and season with pepper.

7. Cook for 8 minutes in the oven.

8. Remove from the oven.

9. Serve 2 escalopes per plate, drizzled with some sauce. Serve with quartered tomatoes, cooked in olive oil.
