1. Season the veal liver slices with salt and pepper. In a pan, melt 1 tablespoon of butter. Add the liver slices and cook for 5 minutes. Reserve warm.
2. In the same pan, add 1 tablespoon of butter and cook the onions over medium heat for 3 minutes. Add the sugar and let it caramelize for 1 minute. Deglaze with balsamic vinegar and let it reduce by half. Add the broth and let it reduce for 2 minutes.
3. Add the cold butter and mix with a whisk without stopping.
4. Sprinkle the liver slices with chopped parsley. Pour the sauce and onions over the parsleyed liver slices and serve.
