Preparation
1. Chop the vegetables into small pieces.
2. In a large pot, sauté the onions and vegetables in 8 c. à soupe of extra virgin olive oil. Cook until the onions are transparent. Set aside.
3. Drain the beans. Reserve 4 c. à soupe of beans. In a blender, reduce the rest to a purée.
4. Add the cooking water, bean purée, lentils, and grated cabbage to the vegetables. Cook over low heat for 45 minutes.
5. Integrate the corn flour and cook for 40 minutes longer.
6. Pour a few jets of extra virgin olive oil over each serving, and serve immediately.
