1. Peel and chop the onions. Cut the bell peppers into thin strips and the zucchinis into slices. Chop the herbs together. Butter a baking dish and set aside. Cut the goat cheese into slices.

2. In a pan, heat 1 tablespoon (0.5 fl oz) of oil. Add the onions and cook for 4 minutes. Add the bell peppers and zucchinis, and cook for 8 minutes, stirring often. Season with salt and pepper. Set aside 3 tablespoons (1.5 oz) of the vegetables.

2. In a large bowl, beat the eggs with the cream, cayenne pepper, a pinch of salt, and pepper. Add the herbs and vegetables. Pour into the baking dish.

3. Preheat the oven to 350°F (177°C).

4. In the dish, transfer the reserved vegetables and the goat cheese. Drizzle with olive oil. Bake and cook for 30 minutes. Serve.
