In a large, heavy pot, melt the butter over high heat. Add the mushrooms, walnuts, onions, celery, and bay leaves, and sauté until golden brown (about 5-10 minutes). Reduce heat to medium, add flour, and cook for 2 minutes. Stirring constantly, gradually add the hot broth and sherry. Bring to a boil.

Let simmer for 20 minutes, then remove the bay leaves.

Remove the pot from the heat. Using a hand blender, puree the mushrooms until almost smooth or to the desired consistency.

Return to heat, bring to a boil, then add the thyme and cream. Mix well. Garnish with sautéed mushrooms or blue cheese, if desired, and serve.
