In a large, heavy pot, melt the butter over high heat. Add the mushrooms, walnuts, onions, celery, and bay leaves, and sauté until golden brown (about 5-10 minutes). Let simmer for 20 minutes, then remove the bay leaves.

Return to heat, bring to a boil, then add the thyme and cream. Mix well. Garnish with sautéed mushrooms or blue cheese, if desired, and serve.
