1. Preheat the waffle iron.
2. Grind the wild rice into a flour in a spice grinder or coffee grinder. Sift the wild rice flour, all-purpose flour, salt, and yeast into a large bowl. Mix in the pecans.
3. Put the egg yolks in a medium-sized bowl and beat them lightly. Add the milk, melted butter, and melted bacon fat, and whisk to combine. Stir in the cooked wild rice and mix well.
4. Beat the egg whites until they form peaks; fold them gently into the batter.
5. Generously brush the waffle iron plates with melted butter, and cook the waffles according to the manufacturer’s instructions. Serve immediately.
Note: These are not dessert waffles; they can serve as a base for an appetizer, such as poultry in a wine sauce, rabbit with a mustard sauce, or creamy chicken.
