Preheat the oven to 350°F (180°C).
1. In a food processor, mix the flour, spices, and butter. You will get a sandy-looking dough.
2. Add the water little by little until the dough forms a homogeneous ball.
3. Remove the dough from the processor and let it rest for 15 minutes in the cold.
4. Meanwhile, cook the pancetta in a pan and set aside.
5. On a floured work surface, roll out the dough and place it in a tart pan.
6. Bake the dough for about 6 minutes or until the bottom is no longer translucent, then set aside. Reduce the oven temperature to 350°F.
7. Meanwhile, cook the leeks in butter for 5 to 7 minutes.
8. Fill the quiche crust. Season with salt and pepper.
9. In a bowl, mix the milk, cream, and eggs with a whisk.
10. Pour this mixture into the quiche. Add the pancetta, then sprinkle with cheese and bake for 15-20 minutes.
